A good start on this issue may be the texbook by Millero, F.J. (1996): 
Chemical Oceanography (2nd ed.). - CRC Press, Inc., Florida, 469 p.

I don't know if pH data is direct available as plots from these sites or 
if there are pH data at all, but resources worth a try are:
