Hello Greg,
You can measure honey on an EA pretty simply. The tricky part is weighing it out; especially if you managed to get that last few percent of moisture out of it. It's been years since I've weighed out honey, but you can just use a probe to get a tiny droplet on and touch to the inside of the capsule where some of it will stay. Just don't squish it back out folding up the capsule. Basically, any technique that works with NBS-22 will work with honey.
Keep in mind that like other sugars, it has a lot of Carbon and won't require much material. For the nitrogen, if trying to determine adulteration, you'll also benefit from doing a nutrient extraction (where much of the N will be).
