I was asked to summarize the results of my query for the list.  Here are some of the responses I received:

The Wilderness Medical Society (http://wms.org).  
Several slide sets are available through their Educational Lecture CE programs including Venomous Snakebite Management, and Wild Animal Attacks.

Medlineplus.gov then "Bites and Stings". The page has a section on human bites with pictures. Image search on www.picsearch.com or Google images for human bites. I had searched Google, but was not familiar with the picsearch site, and found it useful.

There is a section in Forensic Evidence: Science and the Criminal Law (2nd ed) that covers bitemarks. This book has just been released by
Taylor and Francis/CRC Press, and they also have a whole book called Bitemark Evidence. 

NLM produces a FAQ sheet on sources for medical images, including slides, videos, etc. at http://www.nlm.nih.gov/services/images.html.

I also searched LocatorPlus, OCLC First Search, and Mobius looking for books or other materials available--there are several titles that are useful.
