Actually, MediaWiki supports LaTeX-generated formulae via texvc.

This is how it works on wiki.uvm.edu (same software).

When the page is viewed the first time, TeX is automatically called and 
generates the images of the formulae, and they are cached afterwards.

I believe they are also working on a MathML enabled version.
