For many Macintosh users, BBEdit from barebones.com is the Gold
Standard. I've been using it for at least 10 years, and cannot live
without it.
Highly recommended is the Freeware version, TextWrangler, from the
same folks. For most programming tasks, It is nearly
indistinguishable from BBEdit
If I must edit on a Windows platform, I use Jedit

Free, Java based, runs anywhere (Window, Unix, Mac OS X, and even VMS)
