What you want to do in this case is configure your local MTA (postfix
or Sendmail) to use your gmail account as a relay. There are some
pages online that detail how to do this:
And I'm sure google has help documents online somewhere.
Basically the idea is Moodle itself doesn't care about email. It lets
the local system and it's applications handle that. On the majority
of Linux servers that is either Postfix or Sendmail (Personally I
prefer postfix as it's a bit more comprehensible quickly). Once you
get your local server to send email using gmail as a relay, moodle
will do the same.
