I've been using the audio editor in aviary.com to have my elementary students create MP3's pretty cool!

Take a peek at www.aviary.com  as well, there is a free version or a full paid option for $5/semester per user.  It has as some really nice image and audio tools and so far the free account is fine for me personally.

I use Community Clips. Couldn't be easier...records in .wmv so it can be opened in Movie Maker and edited. It is free. Very easy for students to use.
