All probably worthy destinations, but if you're down near Brattleboro, it's staying in the area.  Windham County is one of this country's cradles of cycling, road & mountain.

Maps for Ascutney trails can be bought at Brownsville General Store. Definitely worth the trip.   I went twice last year and plan on going a couple of times this year.

Assuming you are travelling through Rutland either going to or coming from Bennington, you MUST hit the Pine Hill Park trails:
