I have some young basil plants (1-2" high).  Something is eating the leaves completely and leaving the stems.  I've examined the plants and soil for insects or caterpillars and have found none.  They are outside during the day guarded by two large dogs. They are inside at night, which is where the damage seems to occur.  Mice?
