We've got weed issues in our winter squash and are considering harvesting the squash early to make it easier to take care of the weeds. This would be 3-4 weeks earlier than normal. We have space to spread them out in a greenhouse. Does anyone have experience with harvesting a crop this early? Will they all still ripen fully? How does it affect the taste and texture? --
