1. Can you have them just append the document each week?   Teach the kids to click insert => new page and then just keep adding to one single document (I would suggest adding to the firs page and push the old stuff down).   This way the entire assignment is all in one place and students and the teacher can see progression. 

2. Use a Blog site like kid blog or blogger and post to the blog weekly.
